Serves 3:
Ingredients:
8 oz. thawed frozen spinach
1/4 cup cheddar cheese
3 cups milk
3 Tbsp. flour
3 Tbsp. olive oil
3 Toasted English muffins
3 eggs
Directions:
1.Toast the English muffin
2. Make cheese sauce: heat 2 Tbsp olive oil in a pan, stir in 2 Tbsp. flour, 2 cups milk, 1/4 cup cheddar cheese. Stir it around and let liquid boil off and flour absorb the milk until it is thick and sauce-like.
3. Put half the sauce to the side.
4. Stir half a bag of thawed frozen spinach into the sauce in the pan.
5. Fry 3 eggs (can use part egg whites and it tastes no different)
6. Layer on top of the toast: spinach mixture, fried egg, cheese sauce.
