
Protein: Beans
Adapted from: http://allrecipes.com/recipe/vegan-bean-taco-filling/
brown:
1 onion
1 bell pepper
2-3 cloves garlic
add:
1 tsp Paprika
1/4 tsp Cayenne pepper
1/4 tsp chili powder
1.5 tsp cumin
Combine with:
2 cans beans (black, kidney, or pinto), mashed
2 Tbsp yellow corn meal
1 cup salsa
simmer for 5 minutes
Serve on a heated taco shell with cheddar cheese and sour cream
I didn't have lettuce for crunch, so I put on shaved fennel and it was very, very tasty!
